SINGAPORE LOCAL SNACKS: SAME SAME, BUT DIFFERENT – THE GREAT SINGAPOREAN CURRY PUFFS

Did you know? Many snacks around the world share similar bases like flour, potatoes, and butter. Zoom into Asia, and you’ll find our local street foods packed with rich ingredients like coconut, sweet palm sugar, prawn paste, and punchy curry powders.
To kickstart our brand-new "Same Same, But Different" Singapore local snacks series just in time for National Day, we are exploring three well-loved, distinctly packaged curry puffs from across Singapore's main Malay, Chinese, and Indian communities.
Some may look similar on the outside, but they hide totally different cultural secrets on the inside. You can find them not just in malls, but also in many hawker centres, food stalls, and spots located directly at or right next to major MRT stations and bus interchanges across Singapore.

The Great Singaporean Curry Puffs

1. Epok-Epok (The Thin-Crust Classic)
The Cultural Influence: Malay Style
The Look: A thin, delicate, and slightly bumpy/blistered crescent-shaped pastry shell held together by hand-pinched rope pleats.
The Inside: Curried potato or sardine
2. The Spiral Curry Puff / Karipap Pusing (The Layered Pastry)
The Cultural Influence: Chinese style (with some Halal options like Tanglin Crispy Curry Puff & Old Chang Kee)
The Look: A crescent pastry with swirly/spiral layers across the shell that resemble a thumb fingerprint or a seashell
The Inside: Curried potato with shredded chicken and a quarter-cut hard-boiled egg
3. The Indian Triangle Puff / Kali Pap (The Crispy Corner)
The Cultural Influence: Indian Style
The Look: Usually a sharp, flat, and large geometric triangle featuring very clean, smooth, flat-fried edges. Some food stalls also serve these puffs in a rectangular shape.
The Inside: Minced mutton or chicken with dry spices, rather than a wet, gravy-based potato mix.
